How to Make Butter Pecan Ice Cream Sandwiches
Here’s how to make this delicious treat:
1. Make The Buttered Pecans
The homemade buttered brown sugar pecans in this recipe are EVERYTHING. Simply mix chopped pecans with butter and sugar in a small bowl, then roast in the oven. However, you can also save time by using pre-made praline pecans!
2. Mix Into Vanilla Ice Cream
Mix the pecans into your favorite softened ice cream in a medium bowl, then flatten it into a 9×13 baking pan. Refreeze for 30 minutes to 1 hour!
3. Make The Chocolate Cookies
Mix the chocolate cookie dough in a large mixing bowl, then roll out onto a lightly floured surface. Cut into 24 rectangles (about 4×2 each) by cutting 12 slices vertically and one big slice down the middle horizontally. Place on a baking sheet (with space in between each one) and bake!
4. Combine The Sandwiches
Next up, cut the ice cream into 12 4×2 rectangles (just like the cookies). Layer each rectangle in between 2 cookies and enjoy (or freeze for later)!

Ingredients
Chocolate Sandwich Cookies
- 1 3/4 cups all-purpose flour
- 2/3 cups cocoa powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 3/4 cup butter softened
- 1 cup sugar
- 1 teaspoon vanilla
- 2 large eggs
Butter Pecan Ice Cream
- 1 1/4 cups chopped pecans
- 1/4 cup butter melted
- 1/4 cup brown sugar
- 6 cups vanilla ice cream
Instructions
Make The Buttered Sugar Pecans
- Preheat the oven to 350 degrees F.
- Mix the chopped pecans, melted butter, and brown sugar.
- Evenly spread on a baking sheet lined with parchment paper.
- Bake for 15-20 minutes, turning halfway.
- Let cool completely.
Butter Pecan Ice Cream
- While the pecans are cooling off, set the ice cream out to soften for about 10 minutes.
- Prepare a 9×13 baking pan with parchment paper.
- Place the ice cream in a large, deep bowl and mix with the buttered sugar pecans.
- Place the ice cream in the prepared baking pan, flattening it with a spatula.
