This Butterscotch Pecan Pie is the best of the best! Flatten the pie crust on to a 9-inch pie pan and place in the refrigerator.
Melt the butter and butterscotch chips together in the microwave for about 1 minute 30 seconds, stirring between each 30 second mark. (The texture should be a smooth paste, not runny.)
In a large bowl or mixer; bring together the corn syrup, eggs, vanilla, and butter/butterscotch mixture until well blended.
Stir in the pecans.
Pour the pie filling into the uncooked pie crust.
Bake for 60-70 minutes, or until most of the pie seems stable (a little jiggle in the center is okay).
Let cool for 2 hours at room temperature, then serve or refrigerate for later!

*Feel free to make your own homemade pie crust, use a pie crust mix, or buy a pre-made uncooked pie crust from the grocery store!*To add a butterscotch drizzle, simply melt 1/4 cup butterscotch with 1/2 Tablespoon of butter or oil and drizzle over the entire pie. So good!
