Roll out the puff pastry sheets on to a large baking sheet lined with parchment paper.
Use a knife to score the outside of each puff pastry, creating a "crust" about 1/2 inch from the edge.
Use a fork to create several holes (without puncturing all the way through) throughout the middle of each pastry sheet. Set aside.
Wash the apples and cut into thin slices.
Place the apples in a bowl and combine with the lemon juice, tossing to ensure that each slice is covered.
Spread or crumble the goat cheese evenly over the puff pastry sheets, adding more than the amount in this recipe if desired.
Lay the apple slices evenly over goat cheese.
Sprinkle the brown sugar evenly over the apples.
