Ingredients

Rice Krispies Treats

  • 1/4 cup butter
  • 2 1/2 cups mini marshmallows
  • 1 teaspoon vanilla extract
  • 1 Tablespoon maple syrup
  • 3 cups rice krispies cereal

Dark Chocolate Topping

Instructions

Make the Rice Krispies Treats

  • Melt the butter in a sauce pan over medium heat.
  • Once the butter is melted, add in the marshmallows, stirring often as they melt.
  • Add in the vanilla and maple syrup, continuing to stir just until the marshmallows melt.
  • Remove from heat and add in the rice krispies cereal.
  • Gently press the mixture into a 9x9" baking pan lined with parchment paper, making sure not to press too firmly (so that it's not overly packed in).
  • Refrigerate for about 30 minutes.

Make the Dark Chocolate Topping

  • Melt the butter and chocolate chips in a small bowl in the microwave, 30 seconds at a time and mixing in between.
  • Once the mixture is melted and smooth, remove the rice krispies pan from the refrigerator and pour the chocolate over them.
  • Lightly smooth out the chocolate and add sprinkles (or toppings of choice).
  • Place back in the refrigerator for another 30 minutes.

Cut the Chocolate Covered Rice Krispies Treats

  • Remove the chocolate covered rice krispies pan from the refrigerator and transfer to a cutting board.
  • Cut into about 12 rice krispies.
  • Serve and enjoy!

Notes

  • Don't press the rice krispies mixture into the pan too firmly! This will result in rock-hard rice krispies treats. The key is to very gently press into a pan, just until it's even.
  • You can allow the rice krispies treats to set in the refrigerator for 30 minutes or at room temperature for 1 hour.
  • Chocolate Covered Rice Krispies Treats can be stored in an airtight container at room temperature for up to 3 days or in the refrigerator for 3-5 day!
