Apple Cider Muffins

Sweet and delicious, these Apple Cider Muffins are perfect for fall! Made with real apple cider and applesauce, these easy muffins have so much flavor. They're soft, light, and SO yummy, especially when they're warm out of the oven!

Ingredients
  

  • 2 1/2 cups all-purpose flour
  • 1 Tablespoon baking powder
  • 1 teaspoon baking soda
  • 1/2 cup granulated sugar
  • 3/4 cup brown sugar
  • 1/4 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground nutmeg
  • 3/4 cup apple cider
  • 1/2 cup applesauce
  • 1/2 cup vegetable oil
  • 2 large eggs room temperature
  • 2 teaspoons vanilla extract
  • turbinado sugar optional, for topping

Instructions
 

  • Preheat the oven to 350°F and line a 12-count muffin tin with paper liners. Set aside.
  • Whisk together the flour, baking powder, baking soda, granulated sugar, brown sugar, salt, cinnamon, and nutmeg in a large bowl.
  • Make a well in the center of the dry ingredients using a spoon and add in the apple cider, applesauce, oil, eggs, and vanilla.
  • Whisk the liquid ingredients together in the center of the bowl and then incorporate the dry ingredients from the sides of the bowl to form a batter. (Whisk for around 30 seconds, then use a rubber spatula to ensure all ingredients are incorporated. Be sure not to overmix as the batter can become dense.)
  • Scoop about 1/4-1/3 cup of batter into each muffin cavity.
  • Sprinkle turbinado sugar over each muffin before baking (optional).
  • Bake the muffins in the center rack of the oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  • Allow the muffins to cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely.

Notes

  • The applesauce lends an extra apple flavor & great texture, but if you don’t have any it can be swapped for buttermilk.
  • If you don't have apple cider, apple juice can be a great substitute.
  • You can swap the cinnamon and nutmeg for 2 teaspoons of “Apple Pie Spice” if you prefer.
  • Don’t overmix the batter!
