Muffins

  • 2 1/4 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 Tablespoon baking powder
  • 1 Tablespoon ground cinnamon
  • 1/2 teaspoon salt
  • 1 cup milk 2% or whole
  • 1/2 cup canola or vegetable oil
  • 2 large eggs
  • 1 teaspoon almond extract

Cinnamon Streusel

  • 3/4 cups all-purpose flour
  • 1/4 cups packed light brown sugar
  • 1/8 cups granulated sugar
  • 2 teaspoons ground cinnamon
  • 4 Tablespoons unsalted butter, melted

Instructions
 

  • Preheat the oven to 400 degrees F.
  • Line muffin tins with liners or spray with oil.
  • Mix flour, sugar, baking powder, cinnamon, and salt together well in a large bowl.
  • Whisk together the milk, oil, eggs, and almond extract in a separate bowl.
  • Pour wet ingredients into dry ingredients and stir gently, until just combined.
  • Scoop batter into muffin tins, filling about halfway.
  • Combine flour, brown sugar, white sugar, and cinnamon in a separate bowl. Stir well with a fork. Add the melted butter and continue stirring with the fork, forming a crumbly mixture.
  • Divide streusel mixture evenly over each muffin, about 1 Tablespoon per muffin.
  • Bake in the oven for 15 minutes (or until a toothpick comes out clean).
  • Remove and let cool on a cooling rack. Enjoy!

Notes

  • Mix the batter until just combined. Overmixing can cause muffins to be dense.
  • Fill muffin tins about half full. These muffins rise quite a bit in the oven.
  • Substitute vanilla extract for the almond to change up with flavors.
  • Leave your streusel in larger crumbles for crunchier bits on the muffin tops!
