  • Flour – All Purpose
  • Granulated Sugar
  • Baking Powder – Makes the muffins light & fluffy.
  • Ground Cinnamon
  • Salt
  • Milk – 2% or Whole milk works best for this recipe!
  • Oil – Canola or Vegetable.
  • Eggs
  • Almond Extract – A surprising and delicious addition!

  • Flour
  • Brown Sugar
  • Granulated Sugar
  • Cinnamon
  • Melted Butter

How to make cinnamon streusel muffins

These applause-worthy muffins are reminiscent of coffee cake, take only basic ingredients, and come together very quickly!

  1. Whisk together the dry ingredients in a large mixing bowl, and wet in another.
  2. Pour the wet ingredients into the dry, and gently stir until combined.
  3. Fill muffin cups or a muffin tin about half-full. This batter rises quite a bit while baking.
  4. Mix all of the streusel ingredients with a fork, making a crumbly mixture.
  5. Sprinkle each muffin with streusel, bake, cool on a wire rack, and enjoy!

Tips for the recipe

  • Cinnamon Streusel Muffins are topped with a crumbly mixture. I love using these muffin papers because they help hold more of the crunchy goodness!
  • The muffin batter only needs to be mixed until just combined. Over-mixing can make for denser muffins.
  • Keep some of your streusel mix in larger pieces for texture variations.
  • These are delightful warm or room temp. To warm them, just pop them in the microwave for 7-10 seconds!

  • Vanilla – It would make a great substitute for the almond extract in these muffins.
  • Streusel Topping – Completely optional! Leave it off for an even quicker basic cinnamon muffin.
  • Icing – Drizzle the glaze from this recipe over the cinnamon streusel topping for a pretty & fun addition!
  • Buttermilk – Substitute for the regular milk to add a hint of tanginess.
  • Nuts – Add 1/4 cup finely chopped nuts like pecans or walnuts to the crumble topping.
  • Powdered Sugar – Lightly dust the tops of muffins before serving.

how to store

Cinnamon Streusel Muffins store beautifully! Put them in an airtight container at room temperature for 2-3 days, in the fridge for 3-5 days, or in the freezer for up to 3 months! Thaw completely before reheating muffins.

Ingredients
  

Muffins

  • 2 1/4 cups all-purpose flour
  • 1 cup granulated sugar
  • 1 Tablespoon baking powder
  • 1 Tablespoon ground cinnamon
  • 1/2 teaspoon salt
  • 1 cup milk 2% or whole
  • 1/2 cup canola or vegetable oil
  • 2 large eggs
  • 1 teaspoon almond extract

Cinnamon Streusel

  • 3/4 cups all-purpose flour
  • 1/4 cups packed light brown sugar
  • 1/8 cups granulated sugar
  • 2 teaspoons ground cinnamon
  • 4 Tablespoons unsalted butter, melted

Instructions
 

  • Preheat the oven to 400 degrees F.
  • Line muffin tins with liners or spray with oil.
  • Mix flour, sugar, baking powder, cinnamon, and salt together well in a large bowl.
  • Whisk together the milk, oil, eggs, and almond extract in a separate bowl.
  • Pour wet ingredients into dry ingredients and stir gently, until just combined.
  • Scoop batter into muffin tins, filling about halfway.
  • Combine flour, brown sugar, white sugar, and cinnamon in a separate bowl. Stir well with a fork. Add the melted butter and continue stirring with the fork, forming a crumbly mixture.
  • Divide streusel mixture evenly over each muffin, about 1 Tablespoon per muffin.
  • Bake in the oven for 15 minutes (or until a toothpick comes out clean).
  • Remove and let cool on a cooling rack. Enjoy!

Notes

  • Mix the batter until just combined. Overmixing can cause muffins to be dense.
  • Fill muffin tins about half full. These muffins rise quite a bit in the oven.
  • Substitute vanilla extract for the almond to change up with flavors.
  • Leave your streusel in larger crumbles for crunchier bits on the muffin tops!
