Matcha Brownies Recipe

Dalya Rubin
These Fudgy Matcha Brownies are SO good! Made with a layer of brownie batter, then a layer of fudgy matcha brownie batter in the center, and finished with more crinkly brownie on top, every bite is such an indulgent treat. Warm, gooey, chocolatey, and delicious!

Matcha Brownie Batter

  • 3 Tablespoons unsalted butter
  • 2 ounces white chocolate bar, chopped
  • 1 1/2 Tablespoons matcha powder
  • 3 Tablespoons canola or vegetable oil
  • 1/2 cup granulated sugar
  • 2 Tablespoons light brown sugar
  • 1 large egg, cold
  • 1 large egg yolk, cold
  • 1/2 teaspoon vanilla extract
  • 1/4 cup all-purpose flour, spooned and leveled
  • 1/4 teaspoon sea salt

Instructions

Prep

  • Preheat the oven to 350°F. Prepare an 8”x8” pan by greasing with baking spray and lining with parchment paper, allowing some of the parchment to overhang the pan for easy removal.

Make The Fudge Brownie Batter

  • In a large microwave-safe bowl, melt together the butter and semi sweet chocolate in the microwave for 30 second intervals, stirring in between, until fully melted.
  • Mix in the oil and cocoa powder. Whisk in granulated sugar and brown sugar.
  • Add eggs and vanilla extract. Whisk until combined.
  • In a medium bowl, whisk together flour, cornstarch and salt.
  • Whisk dry ingredients into the wet ingredients. Mix/fold with a rubber spatula until thick and well combined. Set aside the batter.

Make The Matcha Brownie Layer

  • In a large microwave-safe bowl, melt together the butter and white chocolate in the microwave for 30 second intervals, stirring in between, until fully melted.
  • Whisk in the oil and matcha. Mix in granulated sugar and brown sugar.
  • Add eggs and vanilla extract. Whisk until combined.
  • Sift the flour and salt into the liquid ingredients & mix/fold with a rubber spatula until thick and well combined.

Combining The Layers

  • Spoon half of the Fudge Brownie batter into the prepared pan and smooth into an even layer with a spoon.
  • Spoon the Matcha Brownie batter on top and spread into an even layer.
  • Spoon the remaining Fudge Brownie batter on top of the matcha layer and spread until it covers the matcha layer.

Bake

  • Bake for 45-50 minutes or until the top of the brownie is crackly and a toothpick inserted into the center comes out mostly clean.
  • Place the brownie pan onto a wire rack to cool for 20 minutes, then lift the parchment paper overhang to remove the entire brownie and allow it to cool for 1 hour.
  • Once fully cooled, cut into 16 squares and enjoy!
