These super simple Monster Cookie Bars are ready to bake in just 10 minutes! The chewy oatmeal peanut butter cookie base is full of chocolate chips and M&M's making them an irresistible treat. Ingredients
  

  • 1/4 cup butter
  • 1/4 cup sugar
  • 1/4 cup dark brown sugar
  • 1/3 cup creamy peanut butter
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 3/4 cup flour
  • 3/4 cup old fashioned oats
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1/4 cup semi-sweet chocolate chips
  • 1/4-1/3 cup M&Ms

Instructions
 

  • Preheat the oven to 350 degrees F.
  • Cream the butter and sugars together with a stand or electric hand mixer until smooth and fluffy.
  • Add the peanut butter, egg, and vanilla, and mix on low speed until completely combined.
  • Add the flour, oats, salt, baking soda, and baking powder, and mix well with the mixer.
  • Stir in the chocolate chips and M&M’s with a spoon or spatula.
  • Scoop the batter into an 8x8 or 9x9 square baking dish and smooth the top.
  • Bake for 20-25 minutes until golden brown.
  • Allow the bars to cool for at least 30 minutes before cutting and serving.

Notes

Store in an airtight container or bag. Room-temp for up to 5 days, in the refrigerator for up to 1 week, or freeze for up to 3 months.
Double the recipe and make them in a 9x13 pan for a larger batch.
