  • Canola Oil – The neutral oil is the fat in the cake keeping it nice and moist and rich. You can substitute it with any neutral oil like vegetable oil or avocado oil.
  • Sugar – White sugar sweetens the cake and doesn’t mask the flavor of the cake.
  • Flour – All-purpose flour is ideal for this recipe. You can easily make it gluten-free by swapping for equal parts of a 1:1 Gluten-Free Flour.
  • Salt – Just a touch of salt brings out both the sweet and tangy flavors of the cake.
  • Baking Powder – The baking powder in this recipe gives us the lift and rise on the cake.

How to Make This Easy Coffee Cake Recipe

Making the Cake Batter

  1. Add all of the cake ingredients into a large bowl and stir them gently. No need for a hand mixer.
  2. Stir the batter until it’s completely uniform but be careful not to stir it too quickly or roughly. It will be thick.

Making the Filling

  1. Mix the filling ingredients together in a small bowl, making sure it is all well mixed.
  2. Set aside.

Mix the Streusel

  1. Add the ingredients to a medium bowl and mix the cinnamon streusel ingredients with a fork until worked into small crumbles.
  2. Set aside.

Putting it Together

  1. Add half of the batter to the 9×9 baking pan and smooth it with a spatula.
  2. Sprinkle over the filling ingredients, evenly covering the batter.
  3. Add the remaining batter and smooth it over the entire baking dish.

What is the difference between regular cake and coffee cake?

Coffee cake is typically denser and less sweet than traditional cake. It is also intended to be served alongside a cup of coffee or tea at a breakfast and snack setting rather than as a dessert. Lastly, coffee cake is usually topped with nothing, powdered sugar, or a streusel rather than an icing.

Ingredients
  

Cake

  • 2 large eggs
  • 1 teaspoon almond extract
  • 1 cup sour cream
  • 1/2 cup canola oil
  • 1 cup sugar
  • 2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder

Filling

  • 1/4 cup brown sugar
  • 2 teaspoons cinnamon
  • 1/4 cup finely chopped pecans or walnuts

Streusel Topping

  • 3/4 cup all-purpose flour
  • 1/4 cup brown sugar
  • 1/8 cup white sugar
  • 2 teaspoon cinnamon
  • 1/4 cup butter melted

Instructions
 

  • Preheat the oven to 350 degrees F.
  • Add all of the cake ingredients to a large bowl and stir them well.
  • Combine all of the filling in a small bowl and stir well, and set aside.
  • Add all of the streusel ingredients to a medium bowl and stir well with a fork into a crumbly mixture.
  • Add half of the cake batter to a 9×9 pan and spread to make it even.
  • Sprinkle over the filling to completely cover.
  • Add the remaining batter and spread smooth.
  • Top with the crumbled streusel topping and bake for 45-50 minutes or until a toothpick comes out clean.
  • Allow the cake to cool for 25-30 minutes before cutting and serving.
