This Ice Cream Sandwich Cake is our absolute favorite summer dessert! Not only is it incredibly easy to make with absolutely no cooking required, but it only uses 8 simple ingredients. We’ve made it more times than we can count for everything from summer birthdays, to backyard BBQs, and afternoon treats, and it always disappears fast . The best part? The prep time takes just 15 minutes, and then the freezer handles the rest!

12-13 vanilla ice cream sandwiches unwrapped 6-8 large scoops cookies and cream ice cream about 1 pint, softened at room temperature for 10 minutes 1/3 cup colorful sprinkles 1/3 cup chocolate syrup or store bought chocolate fudge sauce 6-8 Oreo cookies
Line a 8”x8” pan with parchment paper, leaving an overhang for easy removal.
Line the pan with ice cream sandwiches.
Scoop the cookies and cream ice cream on top and spread into an even layers
Sprinkle half of the sprinkles and drizzle with half of the chocolate sauce.
Top with remaining ice cream sandwiches.
Cover with plastic wrap then freeze for 6-8 hours or overnight.
Place all Whipped Cream ingredients into a large bowl and whisk together until stiff peaks form.
Lift up the ice cream sandwich cake using the parchment paper overhang. Transfer to a serving plate.
Ice the entire cake in whipped cream and garnish with sprinkles, crushed Oreos and drizzle with chocolate sauce.
Set in the freezer until ready to eat or serve right away. Slice into squares for each portion.
