This Ice Cream Sandwich Cake is our absolute favorite summer dessert! Not only is it incredibly easy to make with absolutely no baking required, but it only uses 8 simple ingredients. We’ve made it more times than we can count for everything from summer birthdays, to backyard BBQs, and afternoon treats, and it always disappears fast. The best part? The prep time takes just 15 minutes, and then the freezer handles the rest!

We originally created this ice cream cake with ice cream sandwiches because we couldn’t decide between our classic Ice Cream Cake and Butter Pecan Ice Cream Sandwiches. So, we simply combined the two, opting for a cookies and cream flavor, and it’s been a crowd favorite ever since! 

  • 15 Minute Prep – Just 15 minutes of hands-on time, then pop it in the freezer. It looks impressive, but it couldn’t be easier!

  • Versatile – Use different ice cream flavors and toppings to switch up the flavor and satisfy every craving.

Ingredients

Just a handful of easy-to-find ingredients are all you need for this recipe. Here’s what to add to your grocery list: 

Cake Layers

  • Vanilla Ice Cream Sandwiches – About 12 to 13, depending on the brand and size (Use whatever you like best.) Make sure they’re unwrapped and ready to go.
  • Cookies and Cream Ice Cream – Roughly 1 pint (6–8 large scoops), softened slightly so it’s easy to spread.
  • Sprinkles – Use colorful sprinkles for a fun and festive touch!
  • Chocolate Fudge or Syrup – Store-bought is totally fine. Choose your favorite brand.
  • Oreos – Use regular or double-stuffed – whichever you like best! 

Whipped Cream 

  • Heavy Whipping Cream – Cold from the fridge for the best texture.
  • Confectioner’s Sugar – Adds just the right amount of sweetness.
  • Pure Vanilla Extract – For extra depth and a classic whipped cream flavor.

How to Make an Ice Cream Sandwich Cake Recipe

This recipe is simple to prepare and a fun way to get little ones in the kitchen! All you need is an 8×8” baking pan, parchment paper, a large bowl, and a mixer. Here’s how to make an ice cream cake with ice cream sandwiches: 

1. Prepare the pan – Line an 8×8 pan with parchment paper, letting it hang over the edges for easy removal. 

2. Layer – Line the pan with ice cream sandwiches. Then, add ice cream, and spread it in an even layer.

3. Top – Add the sprinkles and chocolate sauce, and top with the remaining ice cream sandwiches. 

4. Chill – Cover the dish with plastic wrap, and freeze.

5. Make the whipped cream – Add all the ingredients to a large bowl, and whisk until stiff peaks form. 

6. Ice – Remove the ice cream cake from the pan, and ice the whipped cream on the top and edges before adding garnishes. 

7. Serve – Slice into squares, and enjoy!

Tips

  • Line the Pan with Parchment Paper – Don’t skip this step! It makes lifting the cake out of the pan and slicing it into squares so much easier.
  • Let the Ice Cream Soften – Set the cookies and cream ice cream out for 10–15 minutes before spreading. This makes it easy to spread. 
  • Freeze Overnight for Best Results – While 6 hours will do the trick, freezing the cake overnight ensures the layers are fully set and slice neatly.
  • Use a Hot Knife for Clean Slices – Dip your knife in hot water and wipe it dry between cuts to remove any crumbs and make clean cuts. 
  • Store in the Freezer Until Serving – This dessert melts quickly. So, keep it frozen until just before serving.

Variations

Here are a few fun variations for the different layers: 

Ice Cream Sandwiches

  • Chocolate Ice Cream Sandwiches – Use all-chocolate sandwiches for a richer base.
  • Mini Sandwiches – Use mini ice cream sandwiches for smaller, bite-sized squares that are easy to cut and great for parties! 

Ice Cream 

  • Mint Chocolate Chip – Swap cookies and cream for mint chocolate chip and garnish with crushed Thin Mints or Andes mints.
  • Peanut Butter Cup – Use peanut butter ice cream, drizzle with warm peanut butter, and top with chopped peanut butter cups.
  • Neapolitan – Alternate layers of strawberry, vanilla, and chocolate ice cream for a fun, classic combo.
  • Homemade Ice Cream – Use homemade ice cream flavors like birthday cake ice cream, strawberry swirl cheesecake ice cream, or Ninja Creami vanilla ice cream for a unique taste. 

Toppings

  • Caramel Drizzle & Sea Salt – Replace the chocolate sauce with caramel, and add a pinch of flaky sea salt for a sweet and salty flavor.
  • Fresh Berries – Top the cake with sliced strawberries, raspberries, or blueberries for a fruity twist.
  • Cherries – Embrace the ice cream theme by adding a few maraschino cherries as a topping. 

How to Store 

Store the fully assembled and frosted ice cream sandwich cake in the freezer, tightly wrapped in plastic wrap or in an airtight container, for up to 1 week.

For easier serving, you can slice the cake into squares before freezing. Then, store the slices in a freezer-safe container with parchment between the layers. To serve, let your cake sit at room temperature for 2-3 minutes to soften slightly, and enjoy!

Equipment

Ingredients
  

  • 12-13 vanilla ice cream sandwiches unwrapped
  • 6-8 large scoops cookies and cream ice cream about 1 pint, softened at room temperature for 10 minutes
  • 1/3 cup colorful sprinkles
  • 1/3 cup chocolate syrup or store bought chocolate fudge sauce
  • 6-8 Oreo cookies

For the Whipped Cream

  • 1 cup heavy whipping cream
  • 1/4 cup confectioners sugar
  • 2 teaspoon pure vanilla extract

Instructions
 

  • Line a 8”x8” pan with parchment paper, leaving an overhang for easy removal.
  • Line the pan with ice cream sandwiches.
  • Scoop the cookies and cream ice cream on top and spread into an even layers
  • Sprinkle half of the sprinkles and drizzle with half of the chocolate sauce.
  • Top with remaining ice cream sandwiches.
  • Cover with plastic wrap then freeze for 6-8 hours or overnight.
  • Place all Whipped Cream ingredients into a large bowl and whisk together until stiff peaks form.
  • Lift up the ice cream sandwich cake using the parchment paper overhang. Transfer to a serving plate.
  • Ice the entire cake in whipped cream and garnish with sprinkles, crushed Oreos and drizzle with chocolate sauce.
  • Set in the freezer until ready to eat or serve right away. Slice into squares for each portion.
