Perfect copycat Nutter Butter Cookies that whip up in just 10 minutes! They're naturally gluten-free, have only 7 ingredients, and are a breeze to make. We cannot get enough of the crispy, peanut-buttery delights.
In a mixing bowl, cream together the sugar and peanut butter until combined.
Add in the egg, vanilla and salt. If your peanut butter is salted, omit the salt.
Scoop the dough into one inch balls. Roll into a log, then flatten with a fork to make criss cross marks. Pinch the middle together so it has a peanut shape.
Bake for 10-12 minutes.
Meanwhile, whisk together the ingredients for the filling.
Once the cookies have cooled, add a spoonful of the filling to one cookie and press another on top. Repeat with all cookies. Enjoy!

Store in an airtight container at room-temp for up to 1 week, or in the freezer for up to 3 months.
