We love really good, but SUPER EASY cookie recipes around here – like our Mexican Cinnamon Cookies and Small-Batch Chocolate Chip Cookies. Sandwich cookies can seem like too much trouble sometimes, but not these. Seriously, the peanut cookies are chewy and crisp around the edges, and the filling is so good you will have trouble not eating it straight from the bowl. These copycat cookies taste even better than the original.

What’s In the Best Nutter Butter Cookies

5-ingredient cookies, and 3 ingredients for the filling – what could be easier? Here’s how to make homemade nutter butter cookies:

Cookies

  • Peanut Butter – We like using unsalted and natural peanut butter so we can control the saltiness and sweetness when using it. But feel free to use the peanut butter you like best. If the peanut butter you use has salt in it, cut the salt in the recipe.
  • Sugar – Granulated white sugar is best for this recipe. You can substitute with light brown sugar for a richer flavor.
  • Egg – The egg is the binder in the recipe.
  • Vanilla – Adding vanilla extract brings all the flavors of the peanut butter to another level and makes it taste just like real Nutter Butter sandwich cookies.
  • Salt – Omit this ingredient if your peanut butter contains salt.
  • Chocolate Chips – These are optional! I like melting them and drizzling it over the top of one side of the peanut butter cookies. You could also use melted white chocolate or peanut butter chips instead.

Nutter Butter Filling

  • Peanut Butter, Butter, and Powdered Sugar – The filling for these peanut butter sandwich cookies is the perfect combination of soft and firm. The filling will squish easily between the cookies, but it won’t seep out of the sides where you don’t want it!

How to Make Easy Nutter Butter Cookies

You will love how quick this recipe is! Satisfy the craving in no time, and no trip to the store. Here’s how to make them:

  1. Preheat the oven, and start by creaming the sugar and peanut butter.
  2. Add the remaining cookie ingredients and stir well until the dough forms.
  3. Scoop the cookie dough into balls, shape, press with a fork, and bake.
  4. Make the filling.
  5. Once the cookies have cooled, add a spoonful of the filling to one cookie and press another on top. Repeat with all cookies. Enjoy!

Recipe Variations

This recipe is just perfect, BUT sometimes you want to switch things up and make them a little different, so here are some fun ideas:

  • Fillings – The base of the filling is peanut butter. Change the flavor by using the spread of your choice. Nutella would make a delicious chocolate hazelnut filling. Add cinnamon to the filling for some festive spice. Cookie butter would also be a delicious base for the filling recipe.
  • Toppings – A chocolate drizzle so yummy on the cookies, but you could use any melted chips as a topping. White chocolate, butterscotch, peanut butter, and milk chocolate chips would all be a delicious addition. Or sprinkle the cookies with flaky sea salt before baking for a little salty taste.
  • Cookie Add-Ins – Add 1 Tablespoon of cocoa powder to the cookie batter for chocolate peanut butter cookies. Add 1 teaspoon of cinnamon for a little spice, or swap the vanilla extract with maple extract for maple peanut butter cookies.
  • Make Them Nut-Free – Swap the peanut butter with Sun Butter or Oat Butter and follow the recipe.

Storing Homemade Nutter Butters

Store the cookies in an airtight container at room temperature for up to 1 week, or freeze them for up to 3 months.

Ingredients
  

Cookies

  • 1 cup peanut butter smooth
  • 1 cup white sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 1/4 teaspoon salt
  • chocolate chips melted, optional for topping

Filling

  • 1/2 cup peanut butter smooth
  • 2 Tablespoons butter melted
  • 3 Tablespoons powdered sugar

Instructions
 

  • Preheat the oven to 350 degrees F.
  • In a mixing bowl, cream together the sugar and peanut butter until combined.
  • Add in the egg, vanilla and salt. If your peanut butter is salted, omit the salt.
  • Scoop the dough into one inch balls. Roll into a log, then flatten with a fork to make criss cross marks. Pinch the middle together so it has a peanut shape.
  • Bake for 10-12 minutes.
  • Meanwhile, whisk together the ingredients for the filling.
  • Once the cookies have cooled, add a spoonful of the filling to one cookie and press another on top. Repeat with all cookies. Enjoy!
