Ingredients
- Peaches – Fresh, ripe white or yellow peaches create the base of this bellini recipe, giving it a sweet, fruity flavor. The riper your peaches, the sweeter and more flavorful your cocktail will be! If frozen peaches are all you have, they will also work. Just make sure to thaw and drain them well before blending.
- Raspberries – Fresh raspberries add a pop of color and a subtle tartness that pairs well with the sweet flavors.
- Lemon Juice – Fresh lemon juice brightens the fruit flavors and balances the sweetness for a well-rounded drink. Bottled lemon juice will also work if needed.
- Honey – This naturally sweetens the peach puree and enhances the fruity flavor.
- Water – We use this to blend the fruit into a smooth puree.
- Prosecco – We use dry (Brut) prosecco as the finishing touch, adding crisp flavor and a touch of bubbles.

How to Make the best Peach Bellini Recipe
With a pretty orange color, this cocktail always looks impressive, and it comes together in minutes! All you need is a blender, a fine mesh strainer, a large bowl, and cocktail glasses. Here’s how to make this Peach Bellini Recipe:
- Blend – Combine all the ingredients except the prosecco in a high-speed blender, and blend until smooth.
- Strain – Pour the mixture through a fine mesh strainer set over a bowl. We typically use a spoon to push the mixture through the sieve, making sure we get as much of the liquid as possible. Discard any remnants caught in the sieve.
- Serve – Divide the blended mixture among your glasses, and top them off with prosecco. Prosecco is super bubbly. So, add a bit, wait for the bubbles to settle, and add more until the glasses are nearly full. Enjoy!

Tips
- Use ripe peaches. The sweeter and juicier your peaches are, the better your bellinis will taste. If your peaches are underripe, let them sit on the counter for a day or two before using.
- Chill everything first. Refrigerate the prosecco and, if possible, the peach puree before serving to keep your cocktails cold without watering them down.
- Don’t skip straining the puree. Running the blended fruit through a fine mesh sieve ensures you don’t get any bits of fruit or seeds in your drink.
- Stir gently before drinking. The fruit puree naturally settles at the bottom of the glass, so give your bellini a gentle stir before sipping.

Variations
- Try a Different Sparkling Wine – If you don’t have prosecco, cava, or Champagne are great substitutes with slightly different flavor profiles.
- Swap the Sweetener – Replace the honey with simple syrup, agave nectar, or maple syrup.
- Make a Peach Bellini Mocktail – Skip the prosecco and top the peach puree with sparkling water, club soda, or a non-alcoholic sparkling wine for an alcohol-free option.
- Add More Berries – Blend in strawberries or blackberries along with the raspberries for a fun twist.
- Make It Extra Peachy – Add a splash of peach schnapps or peach liqueur for a stronger peach flavor and a slightly sweeter cocktail.
- Use Nectarines – Nectarines have a similar sweet flavor and make a delicious substitute for peaches when they’re in season.
- Make a Frozen Peach Bellini – Freeze the peach puree until slushy, or blend the puree with ice before topping it with a splash of prosecco. You can also use frozen peaches in place of fresh peaches for an extra frosty, smoothie-like cocktail that’s perfect for hot summer days.
How to Store
Once assembled, peach bellinis are best enjoyed right away while the prosecco is still bubbly. However, if you want to prep ahead of time, you can store the fruit puree in an airtight container in the fridge for up to 2 days. Or, freeze it for up to 3 months!
To serve, thaw frozen puree in the fridge overnight, pour it into glasses, and finish with prosecco. Or, use it to make frozen peach bellinis!

Notes
