Other Types of Bread for Bread Pudding
While we love the flavor and texture of brioche bread in bread pudding recipes, there are tons of other options out there. Here are some other favorite alternatives:
- Challah: This slightly sweet, soft bread adds richness and absorbs the custard beautifully, making it perfect for bread pudding.
- French Bread: With its firm texture, French bread holds up well to soaking and baking, resulting in a heartier pudding with a bit more structure.
- Sourdough: For a tangy twist, use sourdough bread. Its unique flavor adds depth and pairs well with both sweet and savory variations.
- Cinnamon Raisin Bread: This bread is already packed with flavor, so it adds a nice touch of sweetness and spice to the pudding without needing much extra.
- Panettone: This Italian holiday bread, often filled with dried fruits, brings a festive flavor to bread pudding, making it perfect for special occasions.
- Baguette: Similar to French bread, a baguette’s crusty exterior and soft interior create a nice contrast in texture when baked into a pudding.
- Whole Wheat Bread: For a slightly healthier option, whole wheat bread can be used, offering a nutty flavor and a bit more fiber to the dish.

Variations
Banana Bread Pudding – Mash 2-3 ripe bananas and mix them into the custard for a banana bread twist! You can also add a handful of sliced bananas on top before baking for extra banana flavor.
Pumpkin Bread Pudding – The BEST for a cozy fall version, add 1 cup of pumpkin puree and 1 teaspoon of pumpkin pie spice to the custard mixture. This variation brings warm, spiced notes that pair perfectly with the soft brioche!
Apple Bread Pudding – Peel and dice 2-3 apples and fold them into the mixture before baking. The apples soften and add a juicy, sweet-tart element that balances perfectly with the custard.
Chocolate Bread Pudding – Stir in 1/2 cup of chocolate chips or chopped dark chocolate for a next-level dessert. The chocolate melts into the custard, creating pockets of gooey goodness throughout the pudding.
Croissant Bread Pudding – Swap out the brioche for buttery croissants for an even richer and flakier version! The croissants create a lighter, more delicate texture while still absorbing all the delicious custard. This swap is SO yummy!
How to Store
Refrigerating – Store leftover bread pudding in an airtight container in the refrigerator for up to 3 days. Reheat individual portions in the microwave or oven to enjoy that warm, soft texture again!
Freezing – You can also freeze bread pudding for up to 2 months. To freeze, wrap it tightly in plastic wrap and foil. When ready to enjoy, simply thaw it in the fridge before reheating and serving.
