Ingredients
Puff Pastry Sheets – You can find these at your local grocery store! They usually come in a package of 2 sheets. You can also use homemade puff pastry if desired, but typically store-bought puff pastry works just as great and tastes amazing!
Apples – Any type of apple works great for this recipe! Granny smith apples, fuji, gala, jonagold, or honey crisp are all great options. Here we call for 2-3 smaller apples, but feel free to adjust if using medium to larger sized apples.
Lemon Juice – A little bit of lemon juice helps to brighten the flavor of the apples and keeps them from browning through the baking process.
Goat Cheese – Trust us on this one: goat cheese on puff pastry, paired with apples, brown sugar, and honey, is INCREDIBLE. But if you still feel unsure, you can easily swap out the goat cheese with an equal amount of mascarpone cheese or even cream cheese!
Brown Sugar – The brown sugar adds a warm flavor as well as sweetens the recipe to perfection!
Honey – You won’t want to skip out on the honey drizzle at the end. It truly brings this apple puff pastry recipe to life!
Fresh Thyme (Optional) – Want to take things up a notch? Add a little bit of chopped fresh thyme over the honey drizzle at the end. It’s optional, but SO sooooo good!
How to Make Apple Puff Pastry
Here’s how to make apple puff pastry:
- Roll out the puff pastry dough on to a baking sheet lined with parchment paper.
- Slice the apples and toss with lemon juice in a small bowl.
- Spread the goat cheese evenly over the puff pastry sheets.
- Add the apple slices.
- Sprinkle brown sugar over the apples.
- Bake for 25-30 minutes.
- Let cool and drizzle with honey.
- Cut into 8-16 rectangles!
Note: If making this for breakfast or brunch, you may want to cut the pastry into the larger 8 tart rectangles. Otherwise, slicing the pastry into 16 smaller rectangles works really great if you’re offering this recipe as an appetizer or dessert!

Apple Goat Cheese Puff Pastry
Ingredients
- 1 18 ounce package puff pastry sheets 2 rolls, thawed
- 2-3 small apples
- 2 Tablespoons lemon juice
- 1/2 cup soft goat cheese
- 1/3 cup brown sugar
- 2-3 Tablespoons honey for drizzle
- 1-2 teaspoons fresh thyme, chopped optional
Instructions
- Preheat the oven to 400 degrees F.
- Roll out the puff pastry sheets on to a large baking sheet lined with parchment paper.
- Use a knife to score the outside of each puff pastry, creating a "crust" about 1/2 inch from the edge.
- Use a fork to create several holes (without puncturing all the way through) throughout the middle of each pastry sheet. Set aside.
- Wash the apples and cut into thin slices.
- Place the apples in a bowl and combine with the lemon juice, tossing to ensure that each slice is covered.
- Spread or crumble the goat cheese evenly over the puff pastry sheets, adding more than the amount in this recipe if desired.
- Lay the apple slices evenly over goat cheese.
- Sprinkle the brown sugar evenly over the apples.
- Bake for about 25-30 minutes, or until the edges begin to brown and the apples are soft.
- Let cool for about 10 minutes, then drizzle honey and add chopped thyme (optional) over the puff pastries.
- Slice into 8-16 rectangles.
- Serve and enjoy!
