Ingredients
Flour – All-purpose flour works best in this recipe. However, feel free to use a little bit of whole wheat flour in place of some of the all-purpose flour if desired!
Sugar – A mix of granulated and brown sugar sweeten these muffins to perfection. You can also add a layer of turbinado or brown sugar over the tops of the muffins right before baking!
Spices – The spices in the recipe are a mixture of cinnamon and nutmeg.
Apple Cider – As in apple cider (the drink), NOT apple cider vinegar! This is a common misconception in apple cider recipes. The apple cider adds moisture, flavor, and helps to sweeten the muffins!

Applesauce – Applesauce helps take the flavor to another level! If you don’t have applesauce on hand, you can easily swap it out for an equal amount of buttermilk.
Vegetable Oil – Any type of vegetable or canola oil works great! You can also use coconut oil or avocado oil.
Eggs – The eggs in this recipe help bind it together and adds structure. Easily make this recipe vegan by using a vegan egg substitute!
Vanilla – Pure vanilla extract adds the right amount of warm flavor.

- Mix the dry ingredients together in a large bowl.
- Make a well in the center of the dry ingredients and whisk the liquid ingredients together in the well.
- Combine the liquid and dry ingredients to create the batter.

Apple Cider Muffins
Ingredients
- 2 1/2 cups all-purpose flour
- 1 Tablespoon baking powder
- 1 teaspoon baking soda
- 1/2 cup granulated sugar
- 3/4 cup brown sugar
- 1/4 teaspoon salt
- 2 teaspoons ground cinnamon
- 1 teaspoon ground nutmeg
- 3/4 cup apple cider
- 1/2 cup applesauce
- 1/2 cup vegetable oil
- 2 large eggs room temperature
- 2 teaspoons vanilla extract
- turbinado sugar optional, for topping
Instructions
- Preheat the oven to 350°F and line a 12-count muffin tin with paper liners. Set aside.
- Whisk together the flour, baking powder, baking soda, granulated sugar, brown sugar, salt, cinnamon, and nutmeg in a large bowl.
- Make a well in the center of the dry ingredients using a spoon and add in the apple cider, applesauce, oil, eggs, and vanilla.
- Whisk the liquid ingredients together in the center of the bowl and then incorporate the dry ingredients from the sides of the bowl to form a batter. (Whisk for around 30 seconds, then use a rubber spatula to ensure all ingredients are incorporated. Be sure not to overmix as the batter can become dense.)
- Scoop about 1/4-1/3 cup of batter into each muffin cavity.
- Sprinkle turbinado sugar over each muffin before baking (optional).
- Bake the muffins in the center rack of the oven for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the muffins to cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely.
